How to Make Delicious Veggie (Vegetable) Biryani

This is a delicious way of cooking biryani. Unlike the pressure cooking method, the result will be much tastier.

Things You'll Need

Fine Ground Masala of these ingrdients(for 4 cups rice)

  1. piece of ginger                                                    1
  2. cloves of Garlic                                                    10
  3. tablespoons of coconut powder (dry or fresh)          2
  4. pieces of cinnamon                                              2
  5. pieces of black cloves                                           10
  6. tablespoons of coriander                                       3
  7. cardamom pieces                                                 1 or 2

For seasoning (Season first)

  1. Oil/Ghee/Butter - Use desired medium
  2. green chilies                                                        5-6
  3. big Bay leaf                                                         1
  4. Aniseed (the flower like flavor inducing ingredient)   1
  5. Cashews

Then add,

  1. Big onion                                                            ½
  2. Desired fresh vegetables such as Carrots, beans, peas, potatoes, cauliflower etc
  3. Rice soaked for about half an hour
  4. Half a tin coconut milk
  5. Salt to Taste

After frying the seasoning as listed above, fry the ground masala till it becomes golden brown. Add any desired fresh vegetables such as Carrots, beans, peas, potatoes, cauliflower etc. Fry all the above for 2-3 mins.

Add soaked rice to the above, and mix everything together without stirring too much. (Just gently mix). Use 2 cups of water for 1 cup of rice. Reduce equal quantity of water and add about half a tin of coconut milk. Add desired salt. Also add any desired food coloring.

Cook all these in an open vessel in the medium high flame until the level of rice meets the water level. After this point, close the vessel with a lid and reduce the flame to sim for around 10 minutes. Leave it unopened for sometime before you serve.

Tips

  • Fry the onion till golden brown
  • This biryani is open cooked… So use a big vessel to start seasoning and cooking the rice. Try to avoid opening the lid for checking which might result in uncooked rice.
