South beach - quick recipe - how to make oats pulihodarai ( pulihora)

If you have to make Pulihora (or chitrannam as it is called by some) you need time to cook the rice. With oats you can make instant Pulihora.Moreover, oats are better for health than rice which contain more carbs.

Things You'll Need

  1. Oats                          1cup
  2. MTR instant
  3. Pulihodarai mix           2 tbsp
  4. Oil                             1tbsp
  5. Hot water                    ½ cup
  6. Salt                            to taste
  7. Turmeric                     1 pinch
  8. Green chilies finely chopped    1or2 to taste
  9. Red chilies                  1 or 2 to taste
  10. Asafetida                    1 pinch
  11. Coriander leaves(chopped)    2 tbsp

FOR TEMPERING

  1. Chana dal
  2. urd dal
  3. mustard seeds
  4. cumin
  5. curry leaves

add more salt, green chilies and red chilies only if you like it spicy.

Steps

Heat a pan and dry roast oats for one minute. Keep aside.

heat oil in the same pan, add the tempering ingredients, red and green chilies ( if required) pour ¼ cup water( keep the other ¼ aside), turmeric and salt (use a little less as the MTR powder will have some) bring to a boil and then add the MTR powder.

add the roasted oats. Add the rest of the water if required. Cover and cook for one minute. See that no lumps are there and sprinkle coriander leaves and serve hot.

Tips

  • you can add a tsp of ghee to enhance the taste.
  • You can also make the same with beaten rice (poha)
  • You can make Lime Pulihodara with Oats by following the same procedure without MRT mix, and add lime juice before adding coriander leaves.
  • Oats glycemic index is 70, which makes the oats digest slowly to give a full feeling. Good for weight watchers.
  • Some feel that MTR powder is a little bland . Then only you can use the red and green chilies to make it more spicy

Caution

Do not soak oats. The pulihodarai gets lumpy.
