South Beach Diet Recipe - Baked Tomato Cups with Mint and Cheese

This is a very healthy and delicious recipe that is also low in processed carbohyderates (bad carbs).

Things You'll Need

  • Large tomatoes(cut lengthwise)   3
  • Finely chopped mint and coriander  ¼ cup
  • Bread crumbs     ½ cup
  • Grated cheese     ½ cup
  • Finely minced garlic    2 cloves
  • Pepper powder     ½ tsp
  • Salt to taste
  • Olive oil      3 tbsp (can substitute with cooking spray)

Steps

Pre heat oven to 350 F. While the oven is heating up cut the tomatoes in half (lengthwise if they are not round).  De-seed the half cut tomatoes to make them like cups.  Smear the tomatoes with 1 tbsp oil.

Finely chop the removed portion of tomatoes.  Mix chopped tomato, mint and coriander, bread crumbs, cheese, garlic, salt, pepper powder and 1 tbsp oil.

Arrange the half cut tomatoes in a baking dish cut side up.  Fill each tomato with the mixture of chopped tomatoes, mint, coriander, etc.

Put few drops of oil on the top of each tomato.  Bake for 30 minutes until crusty.  Tomatoes will be soft but hold their shape.

This dish serves upto 6 people.
