How to make Indian Chinese Vegetable Fried Rice

Indian Chinese is a fusion of Chinese cooking adapted to be spicy enough for Indians.  Enjoy this recipe for Vegetable Fried Rice!

Things You'll Need

  • 3 cups cold cooked rice
  • 1 tsp ginger-garlic paste
  • 2 tbsp sesame or refined oil
  • 1 cup chopped vegetables (Beans, carrots, cabbage, peas, capsicum and spring onions)
  • 1 tsp vinegar
  • 1 tsp Soya Sauce
  • 1 tsp sugar
  • 2 tsp tomato ketchup
  • 2 tsp chili sauce
  • Salt to taste.

Steps

Heat oil in a pan, add ginger-garlic paste, chopped vegetables and fry for few minutes.

When the vegetables are half cooked, add vinegar. Add a large pinch of ajinomoto. Add the rice seasoned with salt.

Mix Soya sauce, sugar, tomato ketchup and chili sauce in a bowl.
Add this mixture to the rice and vegetables. Mix well and cook till done.

Tips

  • Use tender and fresh vegetables
  • cooking on high heat will ensure that vegetables retain their colour.
  • Keep ready-made sauces such as garlic chilly sauce handy.
  • Buy a good wok or broad and shallow fryng pan for cooking chinese food.

Caution

  • Use MSG sparingly
  • Remember: vegetables should not be overcooked
