How to prepare Cheesy Vegetables (South Beach Diet)

The South Beach Diet teaches you to eat good Carbohydrates and good fats- the right ones, and lose weight with few restrictions.  This recipe for Cheesy Vegetables has been developed to fit all phases of the South Beach diet.

Things You'll Need

  • Sliced onion                         ½ cup
  • Sliced red bell pepper            ½ cup
  • Diced tomatoes                     ½ cup
  • Freshly ground black pepper   1pinch
  • Egg whites                            2 or 3
  • Grated cheese                      1/2cup
  • Oil as required
  • Milk                                     ¼ cup
  • Corn flour                             2 tbsp
  • Salt to taste

Steps

Heat oil in a pan add onion, bell pepper and sauté for a minute.  Add tomatoes and fry for one more minute.  Then sprinkle salt and pepper.

Beat egg whites, corn flour, milk and pour over the vegetables.  Wait for about 5 minutes until the contents solidify.

When half done sprinkle cheese and keep covered till the cheese melts.  Alternatively this can be baked in an oven till the cheese turns brown.

Tips

  • This recipe serves about 2 people, increase the proportion of the ingredients to prepare for more people.
