Make the Tamarind Chutney with the following ingredients:
Boil until soft, half cup tamarind (remove seeds), one cup pitted dates, one cup brown sugar or finely grated jaggery, one each salt, chilli powder and cumin powder. Grind to a smooth paste after the mixture has cooled. Tamarind chutney is ready.
Make the green mint chutney with the following ingredients:
Grind to a smooth paste one cup mint leaves, one cup green coriander leaves, two cloves garlic, two green chillies, half a teaspoon salt, and one teaspoon of lime juice. Green chutney is ready.
In a large bowl, take three cups puffed rice, one cup of sev mixture, half a cup of finely chopped onion, half a cup of finely chopped green coriander. Add two teaspoons of the green chutney, four teaspoons of the tamarind chutney, and mix. You may add more tamarind or green chutney as per your taste. Garnish with one or two puris, and serve.
