How to make Pomagranate (anar)chutney

Pomagranate  (anar) is good for cholesterol, diabetes, osteoarthritis and also heart problems. It contains vitamin C, Magnesium, calcium, Phosphorus and Potassium. If fresh fruit is not available, dried seeds (anar dana) can be used.

Things You'll Need

  1. Pulp of fresh Pomagranate     - ½ cup (strain the juice)
  2. Mint leaves                           - 2 tbsp
  3. Roasted peanuts                   - 2 tbsp
  4. Chopped onion                     - 1 tbsp
  5. Chana dal                            - 1 tsp
  6. Urd dal                                - 1 tsp
  7. Mustard                               - ½ tsp
  8. Cumin seeds                        - ½ tsp
  9. Red chilies                           - 6-8
  10. Curry leaves                         - 5 or 6
  11. Salt                                     - to taste
  12. Asafetida                             - 1 pinch
  13. Oil                                      - as required

Steps

heat  1tsp oil in a pan, add dals , add red chilies and  chopped onion after one minute and fry till it becomes transparent,   add mint leaves and pomegranate paste. Cover the pan and fry for 1 minute.

grind the mixture with roasted peanuts and salt, using the strained juice instead of water.

heat 2 tsp oil add mustard and cumin seeds and when they splutter add asafetida and curry leaves and pour on the ground chutney.

Tips

  • The juice of the fruit can be consumed with a pinch of salt, 1tsp sugar, 1 tsp lime juice and 1tsp ginger juice for relief from headache and stomach disorder.
  • Soak half cup of anar dana (pomegranate seeds) in hot water for half and hour and use it instead of fresh fruit pulp.

Caution

Do not use iron pan to fry the ingredients. Pomagrante paste will turn black in contact with iron,as it contains Vitamin C.
