How to make Nutritious ragi sangati ( millet delight)

This healthy and filling item is supposed to be poorman’s delight. It takes long to digest, easy to make and very cooling during hot summer. It is very good even for diabetics. Even weight watchers can happily eat this Ragi delight as it is filling and also nutritious.

Things You'll Need

  1. Ragi (millet) flour         - 2 cups
  2. Green gram sprouts      - ½ cup
  3. Grated carrot                - ½ cup
  4. Green chilies                - 2
  5. Finely chopped onion    -  1
  6. Finely chopped mint     -  1 tbsp
  7. Finely chopped coriander
  8. Leaves                        - 4 tbsp
  9. Water                          - 4 cups
  10. Oil                              - as required
  11. Ghee                          -  1 tbsp
  12. Salt                to taste

Steps

Heat oil in a pan add onion, green chilies and fry for one minute. add gram sprouts, carrot, mint, salt  and fry for one minute, add  4 cups of water, and bring to boil.

keep simmering and add millet flour slowly. Keep stirring so that no lumps are formed. add 1 tbsp ghee and keep covered for one minute.

transfer into a bowl and sprinkle coriander leaves.   serve hot with raitha, or ‘pineapple khat mith’.

Tips

  • You can also make balls of this sangati.
  • If you do not like pineapple, make the khat mith with only onions or ladies fingers if you like.
