How to make Mixed vegetable kootu

This is a helthy and delicious sidedish, that can be taken with rice, rotis, Ragi (red millet) balls. Ragi balls are staple food in Karnataka. Mixed Vegetable Kootu is very nutritious and is prepared with less oil which is good for weight watchers.

Things You'll Need

  1. Tuar dal               - 1/2 cup
  2. Tamarind pulp     - 2 tbsp
  3. Jaggery                - ½” cube
  4. Roasted peanuts   - 2 tbsp
  5. Salt to taste
  6. Oil                        - 2 tbsp
  7. Mustard                 - ½ tsp
  8. Asafetida               - 1 pinch
  9. Curry leaves           - 1 sprig
  10. Coriander leaves     - 2 tbsp
  11. Mixed vegetables  - 2 cupsbeans
    • carrot
    • chowchow
    • Peas
    • potatoes
    • brinjal
  12. For MasalaFor 
    • Chana dal
    • urd dal
    • rice (1tbsp)
    • red chillis
    • pepper corns
    • desiccated coconut cumin seeds

Steps

Dry roast the ingredients for masala except chillis which are to be fried in a little oil. The mixture is to be ground to a coarse paste.

pressure cook dal and vegetables till done. mix the ground masala, jaggery, tamarind pulp and salt to taste. add some water and cook on low flame.

fry mustard seeds and asafetida in a tb sp of oil with curry leaves and add to kootu. add roasted peanuts and chopped coriander leaves. and serve hot

Tips

You can make the masala into slightly coarse powder and store it in frig. It can also be stored outside without coconut.

Caution

Keep stirring while cooking the kootu so that it does not stick to the bottom and burn since rice is used in preparation Cook on low flame to avoid burning at the bottom.
