The name, 'ginger beer' can be deciptive. Unlike what its name suggest, ginger beer is not alcoholic in nature. Rather, it is drink which you can feel safe to hand it to a child.
Here is a simple recipie to help you make ginger beer at home.
Take a bowl and put two tablespoons of sugar and add 2 oz yeast. Mix the content well.
To this added the grated ginger along with one cup of water, stir and pour the entire content into the loose lid jar and cover with a cloth.You can store this content in a wine bottle as well which has a fermentation lock.
As the days follow, feed this jar with a tabelspoon of sugar and grated ginger. Do this for 10 days.
Next, in a sauce pan, dissolve 2 cups of sugar in 3 cups of water and allow to boil. Once bolied, cool the syrup and add the juice and peel of 2 lemons. Set aside and allow to cool.
Strain the content of the jar and pour it into the syrup adding 6 cups of water, and mix well.
Put this into a bottle and allow to stand for 3 days.
Your ginger beer is ready.
If you want to change the taste of your ginger beer somewhat, try adding pineapple instead of lemon. Yet another option is to use honey in place of sugar.
The further you allow this beer to stand, the further alcoholic in nature it would become.
This tastes best when chilled.

Though I am from dry state of Gujarat, I being Ex Def person, can afford hard drinks too. But it seems to be a good idea to serve guests with healthy,nutritional drink with different taste and flavour. THANX.
