Dates or Kajoor is very rich in iron and potassium. It is a healthy food. This simple recipe can help you utilize the goodness of kajoor without any elaborate procedures.
Put dates or kajoor in a deep-bottomed vessel and add water to cover it. Cook for five to ten minutes to make dates soft.
Cool dates and put into blender and make a rough paste.
Soak kaju overnight and grind it into a smooth paste.
Mix kaju paste, kajoor pulp, and sugar in a heavy bottom vessel. Cook on low fire until everything mixes well and leaves sides of the pan.
Pour out on a flat plate smeared with very little ghee. Sprinkle the garnishers. Even out the barfi and cover with silver warq. Cut into desired shapes when cool.
