Usually when we make a side dish out of the ridge gourd, the skin is peeled and thrown. Instead of throwing the skin we can make a mouth watering chutney out of it and served with rice or dosa, idli etc.
Put some oil in a pan and mustard, jeera. when the mustard starts splurting put the green chillies and ridge gourd skin, coconut and salt in accordance to taste.
Put some water also and let it boil well, till the water diasppears
Put all the contents into a mixie jar and grind it well. Pour the contents into another vessel and the chutney is ready to be seved
Ridge gourd skin must be fresh for the chutney to be tasty
