How to make Chettinad Chicken

Chettinad Cuisine from Tamil Nadu  is very famous though a little spicy. It has become popular all over South India.

Things You'll Need

  1. Chicken                                 1 kg
  2. Onions                                  2
  3. Red chilies                            20
  4. Black pepper corns                 6
  5. Cinnamon                            2.5” stick
  6. Aniseed                               1 tsp
  7. Cumin                                 1 tsp
  8. Oil                                      3 tbsp
  9. Curry leaves                         few
  10. Ginger & garlic paste             1 tsp
  11. Lime juice                            1 tbsp
  12. Salt & turmeric                     as required

Steps

Make cuts on the chicken pieces and apply salt, turmeric, half of ginger garlic paste and paste of black pepper, cinnamon, aniseed, cumin and  red chilies. Marinate for 3 hours.

Heat oil in a pan – sauté chopped onions for 2 minutes – add curry leaves and the remaining ginger garlic paste stir for a minute and add the marinated chicken,   cover with a lid and fry for a while on low flame. Cook till the chicken is tender stirring frequently.1/3 cup of water can be added if needed while the chicken is cooking

take off from the stove, sprinkle lime juice and serve.
