How to make Bhatura

Bhatura is a north India bread which is accompanied with chhola or chhole (chic pea made in spices).

Things You'll Need

  • All pupose flour ( maida) :  2 cups
  • Baking powder: 1/4 teaspoon
  • Semolina (suji in hindi) : 1/4 cup
  • Salt:  to taste
  • Sugar: 1 tsp
  • Curd : 1/2 cup
  • Water : for kneading the dough
  • Oil for frying

 

Steps

Sift the flour (maida), add salt, sugar and baking powder and suji. Mix it well.

Add the curd and mix, add little oil and knead the dough using water. Knead it for about 5-6 mins.

Leave the dough to rest in room temperature for about 3-4 hours.

Divide the dough in 8 equal parts. make round balls with eaxch part.

Roll the balls using a rolling pin in outward direction. The bhatura should not be too thick and neither should be too thin and it should be rolled equally so that it swells nicely.

For frying the Bhatura / Bhature:
 

  • Heat oil in a deep pan or wok.
  • Put the bhatura in the oil and gently press from top also splash hot oil on the bhatura. Doing this ensures that the bhatura swells evenly withour bursting.
  • Flip the bhatura and fry on the other.
  • Take out from oil while draining the excess oil by tilting the bhatura.

Serve hot with chhole masala.
