How to make Baked Spinach Frittata with Tomato Salsa (South Beach Diet)

The South Beach Diet teaches you to eat good carbohydrates and good fats- the right ones, lose weight, and with few restrictions. You eat normal size helpings of meat, chicken, fish, vegetables, eggs, cheese, nuts and even a dessert- a balanced meal and lose weight while your hunger is satiated.  This recipe has been designed to suit all Phases of the South Beach Diet.

Things You'll Need

  • Chopped spinach   2 cups
  • Sliced onion    1
  • Minced garlic   2 cloves
  • Olive oil    1 tbsp
  • Eggs     2
  • Milk     1/3 cup
  • Mozzarella cheese   ½ cup

For Salsa

  • Tomatoes(chopped)  4
  • Minced garlic   1
  • Minced coriander leaves  2 tbsp
  • Fresh lime juice   1 tsp
  • Salt to taste
  • Freshly ground black pepper ¼ tsp

Steps

To make Frittata


Heat oil in a pan, add the onion and garlic. Stir till the onion is transparent, and then add the spinach. Cover and keep the flame low.

Beat the eggs with milk until yellow and frothy.  Pour the mixture over the spinach.  Cook for 5-7 minutes until the egg mixture sets on the top.  Now sprinkle cheese and cook till the cheese melts.

Tomato Salsa

Blend the tomatoes, garlic, coriander, lime juice and pepper for a couple of minutes until you achieve the desired texture (chutney-like).

 

Serve the Frittata hot with the Tomato Salsa.

Tips

  • This recipe can be prepared 'baked' in a oven.
  • Olive or Canola Oil is preferred.  Alternatively you can use Olive or Canola Cooking Spray which has no fat or cholesterol and is also calorie-free.
  • This recipe serves 2 people.
