How to make Andhra style Ulava Charu (Horse Gram Rasam)

Ulava Charu or Rasam is a traditional Andhra Rasam made from Horse Gram.  It has a spicy, earthy flavor and tastes great with white rice with butter or ghee on top.  Ulava Charu is also useful for relieving colds and coughs as well as prevent the formation of kidney/bladder stones.  Here is a recipe for Ulava Charu...

Things You'll Need

  • Horse gram                            250 gms
  • Jaggery (gud)                         1” cube
  • Tamarind pulp                        ½ cup
  • Baby onions (small)                6
  • Green chillis                           4
  • Red chillis                              1-2
  • Oil                                        1 tsp
  • Garlic                                    2 cloves
  • Dhania(coriander seeds)         1tsp
  • Cumin                                  ½ tsp
  • Rai                                       ½ tsp
  • Turmeric                               ¼ tsp
  • Salt to taste
  • Coriander leaves                    1 tbsp

Steps

Soak horse gram overnight .cook in pressure cooker along with 2 ½ litres of water till soft.

Drain and collect the water.  In addition take 3 tablespoons of the cooked horsegram and grind to a paste.

Grind (dry) coriander seeds,cumin, and garlic together to a powder form.  We will refer to this later as the spice powder.

Heat oil in a vessel add rai, green chillies, red chillis. When they splutter add the drained water ,horse gram paste, peeled baby onions,salt, and turmeric.  Add the pulp of tamarind, jaggery, and spice powder(prepared above) and boil till the liquid thickens

Add chopped coriander leaves before removing from fire.  Serve with fresh cream or butter on the side.

Tips

  • This dish can be refrigerated for upto 1 week.
