How to make Andhra style - gutti vankaya pulusu kura(brinjal curry khatta)

There are many varieties of curries with Brinja in Andhra Cooking. This recipe is for people who like sweet and sour curries.

Things You'll Need

  1. Tender brinjals (round)            ½ kg
  2. Onions                                  6
  3. Green chilies                          6
  4. Garlic pods                            6
  5. Coriander seeds                    1 tsp
  6. Cumin seeds                        ½ tsp
  7. Tamarind pulp                      to taste
  8. Red chilies                           2
  9. Oil                                      8 tsp
  10. Salt, chili powder, turmeric      to taste
  11. Jaggery                               1 cm cube
  12. Coriander leaves                  1 tsp
  13. Mustard, fenugreek, urd dal &        for tempering
  14. Curry leaves

Steps

wash brinjals and make + shaped cuts., slit green chilies lengthwise.

cut and grind onion with coriander seeds, cumin, garlic to a smooth paste. Add salt, chili powder and turmeric to the paste, and fill brinjals with the masala.

heat oil in a pan and add the ingredients for tempering , the stuffed brinjals after a minute. Keep covered and cook turning brinjals to the other side.

pour tamarind pulp, jaggery  and a little water if required and let it simmer till the brinjals are done.
transfer into a serving dish and sprinkle finely chopped coriander leaves

Caution

see that the brinjals are not crushed while turning them.
